By the time my kids are my age, there will be half again as many people on our planet. Food production and distribution will continue to be a major issue and growing food insecurity will lead to more strife and war. It's imperative that we find an alternative protein source available to anyone, anywhere at low to no cost.
We need to be adding insects to our diets.
Chefs are the answer. If they taste good, people will adopt insects as they did lobster and sushi. It's the greatest culinary challenge of our lifetime.
