"The point is that when we know people reject our kind of food, we perceive on some level that they have rejected us." - great point that is rarely mentioned. I've been told that kids in countries where eating insects is traditional are avoiding them because in the west, a steak is the status food everyone wants to eat.

We need to add insects to our diets.

Chefs are the answer. If they taste good, people will adopt insects as they did lobster and sushi. It's the greatest culinary challenge of our lifetime.
